Main Ingredients
  • 1 cup white or brown rice Cooked in two cups of water.
  • 3 pieces chicken breasts Cooked and shredded.
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 4 pieces carrots, diced
  • 2 pieces eggs
  • 3 tablespoons sesame oil Or substitute with butter.
  • 1/4 cup soy sauce
  • optional sesame seeds For garnish.

Method
 

Preparation
  1. Prepare the rice by cooking 1 cup in 2 cups of water. Allow it to cool slightly.
  2. Heat 3 tablespoons of sesame oil in a large skillet over medium heat.
  3. Sauté diced onion and minced garlic for about 3 minutes until fragrant.
  4. Add frozen peas and diced carrots, cooking for about 5-7 minutes until vibrant.
  5. Crack 2 eggs into the pan and scramble them with the vegetables for about 2 minutes.
  6. Combine the cooled rice, shredded chicken, and soy sauce in the skillet. Stir until well combined and heated through.
  7. Remove from heat and let sit for a moment before serving.

Notes

This dish can be customized with leftover veggies, different proteins, or spices. Enjoy it fresh from the pan with optional soy sauce or sesame seeds at the table.
