Method
Preparation of Blueberry Compote
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until blueberries soften.
- If using, dissolve cornstarch in 1 tablespoon of water. Stir this into the blueberry mixture to thicken it. Remove from heat and allow to cool completely.
Mixing Yogurt
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Taste and adjust sweetness with more honey or maple syrup if desired.
Assembly
- Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
- Add a spoonful of cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl gently, creating a marbled effect.
Freezing
- Freeze molds for at least 3 hours until solid.
- Remove frozen bites from molds and store them in an airtight container in the freezer.
Serving
- Serve the Blueberry Swirl Yogurt Bites in a bowl for everyone to enjoy, optionally pairing with a drizzle of honey or fresh blueberries.
Notes
Store in an airtight container in the freezer for up to two months. For optimal texture, remove from the freezer 2-3 minutes before eating.
