  • 2 cups cooked rice Use cooked and cooled rice for best texture.
  • 1 cup cooked chicken, diced Leftover rotisserie chicken is a great option.
  • 1 cup mixed vegetables (like peas, carrots, and corn) Use any vegetables you have on hand.
  • 2 eggs beaten
  • 3 tablespoons soy sauce Use low-sodium soy sauce for a healthier option.
  • 2 tablespoons sesame oil Can substitute with vegetable or olive oil.
  • 2 green onions sliced For garnishing.
  • Salt and pepper to taste

Method
 

Cooking
  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.
  4. Add the cooked chicken and rice to the skillet, mixing everything together.
  5. Pour in the soy sauce and stir well to combine.
  6. Cook for another 2-3 minutes, stirring frequently.
  7. Season with salt and pepper to taste.
  8. Garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for longer storage. Reheat in a skillet for best results.
