Ingredients
  

For the Flank Steak
  • 1.5 lbs Flank Steak Look for a cut with good marbling.
  • 2 tbsp Olive Oil For marinating the steak.
  • 2 tbsp Lime Juice Fresh lime juice brightens every dish.
  • 1 tsp Garlic Powder Feel free to add more if you like garlic.
  • to taste Salt and Pepper Essential for flavor.
For the Bowl
  • 1 cup Rice Your favorite kind (brown, white, or jasmine).
  • 1 can (15 oz) Black Beans Drained and rinsed.
  • 1 cup Corn Can be frozen or fresh.
  • 1 Bell Pepper Use colorful veggies for a vibrant bowl.
  • 1 Onion
  • handful Cherry Tomatoes
  • 4 oz Feta Cheese Adds a nice salty kick (optional).

Method
 

Marination
  1. In a bowl, combine olive oil, lime juice, garlic powder, salt, and pepper. Coat the flank steak in this mixture and let it marinate for at least 30 minutes.
Cooking the Steak
  1. Preheat the grill to medium-high. Grill the flank steak for 6-8 minutes on each side, or until it’s cooked to your liking.
  2. Let the steak rest for a few minutes after grilling to allow the juices to redistribute.
Cooking the Rice
  1. Cook the rice according to package instructions.
Assembling the Bowl
  1. In a bowl, layer the cooked rice, black beans, corn, fresh veggies, and slices of flank steak.
  2. Top with feta cheese if desired.
Serving
  1. Call your family to the table and serve the Flank Steak Bowls family-style.

Notes

Store leftovers in airtight containers in the fridge for 3-4 days. Store veggies separately to maintain freshness. Consider additional toppings like salsa or avocado.
