Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add in the egg, lemon juice, lemon zest, and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the frozen blueberries.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best served warm and can be dusted with powdered sugar for flair. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
