Method
 

Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, lemon juice, and lemon zest until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Scoop out tablespoon-sized balls of dough and roll them in powdered sugar.
  8. Place them on a baking sheet lined with parchment paper, spacing them a few inches apart.
  9. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh but can also be served warm or at room temperature. Store them in an airtight container for up to a week, or freeze the dough for later use.
