Wet Ingredients
  • 3 pieces ripe bananas The riper, the better for sweetness.
  • 1/2 cup mayonnaise Can substitute with yogurt or sour cream.
  • 1 cup sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas using a fork.
  3. Stir in the mayonnaise, sugar, eggs, and vanilla extract until well combined.
Mixing
  1. In another bowl, whisk together the baking soda, salt, and flour.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and level it out.
  2. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with butter, powdered sugar, or yogurt. Leftovers can be stored in plastic wrap and kept fresh for several days.
