Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas using a fork.
- Stir in the mayonnaise, sugar, eggs, and vanilla extract until well combined.
Mixing
- In another bowl, whisk together the baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
- Pour the batter into the prepared loaf pan and level it out.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with butter, powdered sugar, or yogurt. Leftovers can be stored in plastic wrap and kept fresh for several days.
