  • 2 pieces Cornish hens Each person can have their own hen.
  • 2 tablespoons olive oil
  • 2 teaspoons rosemary Fresh or dried.
  • 2 teaspoons thyme Fresh or dried.
  • 1 piece lemon Zest for flavor.
  • 4 pieces carrots Chopped.
  • 1 piece onion Chopped.
  • 4 pieces potatoes Chopped.
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, lemon zest, salt, and pepper.
  3. Rub the mixture all over the Cornish hens.
  4. In a roasting pan, arrange the chopped carrots, onion, and potatoes.
  5. Place the hens on top of the vegetables.
  6. Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  7. Let rest for 10 minutes before serving.

Notes

Cooking time may vary based on oven performance. For a more flavorful hen, consider marinating overnight. Serve with crusty bread or salad.
