- Preheat your oven to 425°F (220°C).
- In a small bowl, mix olive oil, rosemary, thyme, lemon zest, salt, and pepper.
- Rub the mixture all over the Cornish hens.
- In a roasting pan, arrange the chopped carrots, onion, and potatoes.
- Place the hens on top of the vegetables.
- Roast in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Let rest for 10 minutes before serving.
