Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted Let cool slightly before mixing.
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract A dash of extra vanilla isn’t a bad idea!
  • 1 tablespoon lemon zest Optional, brightens flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a madeleine pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until light and frothy. Add the melted butter and vanilla extract, mixing well.
  4. Gently fold in the flour mixture until just combined.
  5. Spoon the batter into the prepared pan, filling each mold about 3/4 full.
Baking
  1. Bake for 10-12 minutes or until the edges are golden and a toothpick comes out clean.
  2. Allow to cool slightly in the pan before transferring to a wire rack.
Serving
  1. Serve with tea or coffee.
  2. Dust with powdered sugar just before serving.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for about a month and reheat in the oven at 350°F (175°C).
