Preparation
- Preheat the oven to 375°F (190°C). Grease a madeleine pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the eggs and sugar until light and frothy. Add the melted butter and vanilla extract, mixing well.
- Gently fold in the flour mixture until just combined.
- Spoon the batter into the prepared pan, filling each mold about 3/4 full.
Baking
- Bake for 10-12 minutes or until the edges are golden and a toothpick comes out clean.
- Allow to cool slightly in the pan before transferring to a wire rack.
Serving
- Serve with tea or coffee.
- Dust with powdered sugar just before serving.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze for about a month and reheat in the oven at 350°F (175°C).
